When cooking, follow the package directions. Use a large pan and heat at least 4 quarts of water to a full, rolling boil. Add the pasta to the rapidly boiling water and stir frequently during the cooking time. (Optional - add 1 tablespoon of salt.)
The cooking water may become cloudy while cooking the gluten-free pasta; this is normal.
As with any pasta, freshly cooked, hot pasta always tastes best, so prepare the sauce first so it is ready for the hot, cooked pasta.
Rinsing the hot pasta will minimize any starch that may collect. Pour the cooked pasta into a colander so the cooking water drains away. Give the pasta a quick rinse and drain again, then drizzle pasta with 1 tablespoon olive oil and toss gently to coat evenly. Transfer the pasta to a serving bowl and top with sauce or proceed with favorite recipe.
For the best flavor and moisture, add a little more sauce or broth than you might typically use.
For a baked dish, cook the pasta according to the minimum time listed on the package until it is just cooked but not over cooked; then proceed with the recipe for the baked casserole or dish. Be sure to moisten all of the pasta generously with the sauce, cheese or meat before baking.
