  • 1/4 cup olive oil
  • 1-2 extra large portabella mushrooms, sliced 1/2 inch thick
  • 1/2 cup onion, chopped
  • 2 large clove garlic, minced
  • 1/2 pound zucchini, halved lengthwise and sliced
  • 28 ounces of meatless tomato sauce
  • 1 tablespoon fresh basil
  • 1/2 teaspoon sugar
  • 1 container (15 oz) part skim ricotta cheese
  • 1 cup (4 ounces) shredded skim milk mozzarella cheese, divided
  • 1/4 cup grated Parmesan cheese, divided
  • 1/4 cup chopped parsley or 2 tablespoons dry parsley
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
